June 29, 2016 in Yummy Eats

Hi guys and happy Wednesday! Going to be sharing some of my recent favorite meals with ya as of late so let’s get started!

Cantaloupe bowls- I have been loving these lately. Just cut half a cantaloupe, scoop out all the seeds, then stuff with either yogurt or cottage cheese. I stuffed this one with Siggi’s raspberry yogurt then threw some Cascadian Farms granola on top + some chia seeds!

Bagels <3 Bagels will forever hold a special place in my heart. Especially bagels with cream cheese. This one is from my fav local place- multigrain bagel + honey walnut cream cheese (SO GOOD) + an iced almond milk latte. Heavenly!!

It was so hot the other day and I was craving something cold and refreshing. Nice cream to the rescue! Just blended 2 frozen bananas, frozen mango, blueberries, 1/2 scoop french vanilla vega one protein powder, and frozen raspberries+strawberries. Put in just enough water and almond milk to blend. Topped with a Perfect Bar in the almond butter flavor which is SO yummy and some chia seeds! Also had some baby carrots on the side since I was craving those. 🙂

Avocado-egg toast will always be my favorite! Had this with some veggies on the side+ some fresh fruit for the perfect lunch! All I do with my eggs is microwave them for 35 seconds too. Perfect easy lunch 🙂

Corn on the cob just screams summer to me. Topped some with Earth Balance butter then had a great and colorful salad with it that consisted of a spinach base, peppers, beats, avocado, pan-fried tofu, and balsamic dressing! Also- pineapple peach Kevita is my all time favorite Kombucha flavor. Definitely give it a try!

Salmon has  been on my mind lately, and my mom cooked some up for me the other day! This dinner was DELISH! Just some brown rice mixed with cauliflower+goat cheese and salmon cooked in a balsamic vinaigrette which was so so yummy!

Now you tell me:

What is your favorite brand of yogurt?

Corn on the cob fan or nah?

Have a lovely Wednesday guys!!

Sending my love as always.

Siggis is just SO good. The creaminess of it is the best!! That was my first time having salmon in a while and I loved it 🙂 nothing like a fresh piece of fish!! Hope you have a lovely day marina, love you!!

Why haven’t I made a canteloupe bowl this year?? I need to asap. Siggi’s and Fage are my favorite yogurt brands. And I love fresh corn but corn on the cob get stuck in bottom retainer lol!

    • Reply Alyssa July 1, 2016 at 1:46 am

I have never tried fage- I feel like I would like it because I love Siggi’s! I need to get some soon.

Avocado toast and salmon… two of my favorite foods in the whole world! Yum yum yum! It looks like you’ve had some amazing eats lately!

My favorite brand of yogurt is Fage because I love how thick it is! And I love corn on the cob. Although I still am a little resistant to getting all those kernels stuck in my teeth because I remember having braces and how hard it was to get stuff un-stuck from them 😛

    • Reply Alyssa July 1, 2016 at 1:47 am

Avocado toast will forever be one of my favorites- same with avocado! I love thick and creamy yogurt. And I feel you with the kernels getting stuck in your teeth- that is the worst part of eating corn on the cob!

Yum! I havent had corn on the cob yet this season but i love it! What a great idea for making the cantaloupe in to a bowl! Ive been loving rice, veggies, and shrimp with some korean bbq sauce on top!

    • Reply Alyssa July 1, 2016 at 1:48 am

That meal sounds so good Heather! I had some shrimp tonight for the first time this summer and I will definitely be having some more in the near future 🙂

Using that melon as a bowl is pretty friggin’ genius if you ask me!

    • Reply Alyssa July 1, 2016 at 1:48 am

Thank you Gigi! Saves on cleaning a bowl too 🙂

  • Reply Ellie June 29, 2016 at 11:52 pm

OMG I need corn on the cob! I wasn’t allowed to eat it for 6 years when I had braces, can you imagine?! I love it grilled too, such a summer food!
I’d say my favorite yogurt is So Delicious, but I’m trying Silk now and it’s pretty fabulous too 🙂

    • Reply Alyssa July 1, 2016 at 1:48 am

I have actually never had grilled corn on the cob. That sounds so good though! I love grilled veggies, especially grilled asparagus!

All of your eats look delicious! I am definitely a chobani girl – but we don’t have too many choices when it comes to plain greek yogurt!

I loveee corn on the cob too! I used to HATE it because I felt like it was too messy and annoying but when we grew our own corn I fell in love and I’ve been hooked ever since. It tastes SO much better!

    • Reply Alyssa July 1, 2016 at 1:51 am

I love Chobani too! So cool that you grow your own corn. I bet it’s so much tastier because it’s nice and fresh!

  • Reply Caroline June 30, 2016 at 1:22 pm

Corn on the cob is the absolute best! It gives me the summer warm and fuzzies! With that fresh salad of yours…wow! Weirdly enough, I actually don’t like yogurt or cottage cheese! They look pretty delicious (especially parfaits), but something about the texture and smell always makes me gag which is a big bummer 🙁

    • Reply Alyssa July 1, 2016 at 1:52 am

That salad definitely made it the perfect meal! I can understand that. I don’t like the texture of certain foods too. Maybe in the future you’ll like it! 🙂 oh and BTW- I bough those Athelta shorts you posted a while back and LOVE them. Been meaning to tell you! Thank you <3 xoxo

Your cantaloupe bowls look amazing! Watermelon is my favorite melon, but cantaloupe is up there too on my list! I really like my local grocery store, Publix’s brand of greek yogurt. It is super thick, and cheaper than the other brands which is a win 😉

    • Reply Alyssa July 2, 2016 at 5:59 pm

I love watermelon too. I like store brand greek yogurts just bc they’re so much cheaper! Chobani adn siggi’s can def add up lol

Mixing rice with goat cheese?!! That’s awesome!
Also, that corn on the cob looks so good, corn is seriously the best food ever!!

    • Reply Alyssa July 2, 2016 at 6:00 pm

It was so good! I saw the idea on instagram but it was with quinoa instead. I love corn so much in the summer!
